So after owning my Bolt for a month, I really only have 1 complaint, and its a big one. The seat was making driving it so uncomfortable that I had to do something, so this is what I did........

I asked my wife what she thought of the seats, she had no problem with them the way they were. I think that people with wide bottoms like myself have the issue. This seems to have made it much better, however eventually I may swap them out with different seats.

I have owned probably 30 cars in my lifetime, these are the only seats I have ever had a problem with.

I don't recall many people adding padding to the back of the seat though, just the bottom cushion. Thank you for the pics!

So how much lateral support is missing after this mod? I was just in a European model of the VW GTI and realized the seats also have a lot of side support for the handling, rather than comfort. TheBOLT is pretty much fun to drive aggressively and can use support. Thanks for the pics.
How hard was it to get the seat covers off and back on?

This looks like a lot of work, and now you have a non-standard modification to your Bolt, which may reduce it's resale value. You still have the issue of the stock fabric getting dirty, sun fading and wear. Just buy a decent set of aftermarket seat covers, like the Wet Okole seat covers on my Bolt. They are padded, which makes the seats much more comfortable. Of course, they are removable and washable too. But they are not cheap.

There was a member here that started the project of swapping the seats with some seats from a VW. We never heard where that project ended up. I suspect he never actually finished the swap. Maybe he considered the safety concerns of losing the side airbags, I don't know.

How does your upgrade affect the seat heating?
Based on the OP's photos, his LT does not have seat heaters. Upgrading it in this fashion will affect the heaters. I used the guide posted by @gaulfinger to do the mod:
https://www.chevybolt.org/forum/226-interior/13810-front-seat-fix.html

and

As you could note from both videos, the padding was added under the heating elements of the seat and seatback, so it does not affect the heating properties. I tested it myself before putting everything back together.

This is the video I was looking for... how to add padding to the seat back. Thanks.
