AC works and cools the cabin, but the temperature sensing does not work properly to control and maintain the setpoint temp. Temp controls are properly set to "On" and "Auto" and both tiny yellow lights are on. Have had both software recalls and problem existed before and after the recalls. Once it hits the setpoint temp (typically we set at 75 degrees), the AC usually (but not always) shuts off completely and refuses to come back on. Then on hot days the temp soon soars in the cabin to well over 80 degrees. The only way I can keep the car cool on hot days is to constantly lower the setpoint Temp. This problem is not noticeable for short local trips but happens frequently on longer 20 minutes plus trips. I think it is either a defective sensor or control logic. The Dealer doesn't know why it's doing this and they asked Chevy 2 months ago to advise how to fix it. Still waiting. Anyone else have this problem or have some ideas on whats causing this? Thanks.

Hopefully you turn on the third tiny yellow light (recirculate) after you have initially aired out the cabin. Recirculation dramatically reduces the load on the air conditioner.

Consider getting a car vent temperature sensor to verify the air coming out of a vent is indeed cooler than the cabin air temperature, such as this one:
