Sorry, I think you are wrong twice:
Pushing the dimmer button locks it flush with the dashboard, to prevent changes;
and, as far as I researched it, and unless I am missing something, the display brightness cannot be adjusted in daylight, regardless of light switch settings.

from my 2017 manual:
The brightness of the instrument cluster display, infotainment display and controls, steering wheel controls, and all other illuminated controls, as well as feature status indicators can be adjusted. The knob for this feature is on the instrument panel beside the steering column.
Never tried to see if it works or not.

The knob definitely dims the display, day or night. What you really want is to go into setting on the center screen and select display/night only. With a dark background the dash it much less hard on the eyes.

[Edit]

I think I was wrong. I just went out in the garage to fool around. Even with the lights on in there at night, the auto headlights stay on, and the dimmer button works. In bright daylight it seems pretty bright in the garage, but the auto headlights still come on, and don't go out until I pull out of the garage. So I now think outside, in bright light, when the auto headlights are out, the dash does not dim. That said, we have had the display set to night only for three years as I find either of the day dash settings too garish. At night I dim the screen all the way down, and if I am really tired, I will hold down the radio knob until it asks if I want the display to go black. It is amazing the difference this makes for night driving.

Thanks. You confirmed my suspicion that the brightness of the displays cannot be adjusted during daylight operation of the car.
And I already do what you did: set the display preference for "night only". At least that gives me a more subdued light at night. But as soon as you connect Apple Play and display, say, a map during the day, its glaring brightness is distracting.

I find it odd that the Chevy engineers never even plugged in say, a bright app like the Apple road map, to come to the realization that the display should be dimmable in daylight, too.

I'm not an apple guy so I don't know if there is an equivalent, but for my android, in the navigation settings of Google maps I have the color mode set to night (also have the Bolt theme set to night) so I have continuity between the two.

Yep, tried that, but Apple's iPhone screen settings do not translate to other screens like the one in the Bolt.
I am curious: am I the only person who finds the screen way too bright and distracting in some applications?
You probably aren’t the only one, but I’m on the opposite spectrum. My Bolt’s windows are tinted, but I find the daylight brightness of the display to be just right. In fact, it would have annoyed me if it was any darker.

Someone should write an Android Auto app that does nothing but display a black screen. :)

Yesterday it was overcast and my displays (DIC and radio) went into night mode, making them too dim to read. After a while they came back on but it was disconcerting.

Ok, missed that. Get a sheet of tinted plastic film and stick it on the screen. Or find a translucent marker and fill in the screen protector that came with car (mine is still on anyway).
That's a good idea. Get a static cling (no glue) film, cut it to size and put it on the display. Maybe something like this one: Greenfilm Static Cling Window Tint 70% A light tint film could be put on in multiple layers if needed to reduce the screen brightness to the desired level. I might try this myself.

Just hold the power button on the radio and you can turn the infotainment screen off. I do this most of the time at night and have the dash turned down to the lowest setting.
