So I have just broken 1000 miles on my 2020 LT. I use 1 pedal almost 100% of the time, but when stopping and I am rolling in, sometimes I feel a little hot (not really hot, then I use the brake). So a little hot, like if I didn't press the brake pedal I would be like really close to the person in front of me, I don't ever let it get to that point, and I always press the brake pedal. Does the Bolt know the stopping distance it should do, and will stop itself a correct stopping distance behind the car in front of me and I should let 1 pedal be smart enough and I should trust it? Or is this not a feature, and if I am going to be let's say 2 feet or less to the car in front of me if I let the regen stop me fully I should still stop with the brake?

Its not a feature and if you don't have the emergency brake assist you will run into the car in front of you.

The emergency brake assist option is just an assist. I can assure you, and document such, that with the option installed it will help brake but will not stop you from impacting the car in front of you. And Chevrolet doesn't claim it will either. Tried that route.

Always stop using the brake pedal if you feel the car won't stop in time. Eventually, with more experience, you will be able to more accurately judge the stopping distance using one pedal driving and will rarely need to use the brake.

If you have the automatic braking option, the car is supposed to stop if it's traveling between 12 and 25mph and detects a pedestrian or car in front of you. The car did this successfully in the IIHS test results:
2019 Chevrolet Bolt 4-door hatchback

If you have the option you'll hear loud beeping and see 5 bright LEDs reflected in the windshield when the system detects a potential crash. I've seen this occur often enough in my 2017 Bolt, but there's no way I'd just sit there and depend on the car to stop for me.

FWIW, I often drive weeks without ever touching the brake pedal. Yes, if a traffic light goes amber at the decision point, sometimes it's necessary to add the finger paddle extra regen. The only time I ever foot the brake is if another driver does something unexpectedly stupid in front of me.

In a word, NO it won't, and NO, you shouldn't drive as if it would.

The pedestrian piece might indeed work but for cars it is not effective. Been there. There isn't one day that I don't get the LED's blinking and the beeps. But effective braking, or braking at all is a different component and it has been nothing short of a disappointment. It has not braked for me and 'IF' it has, I haven't been able to discern that it was AND impact is imminent. It will not stop the car. I know it's asking for too much, and it's not a realistic request but I'd like to see someone post a YouTube video showing it braking, while in (D)rive and the foot is not on the brake and the hand isn't regen braking. If you think the video won't end with the parties exchanging insurance information, you're quite wrong. The automatic braking option, as operating in the Bolt is just there for marketing and a checklist item. It's like LKA.

Oh yeah, I totally agree that it's like LKA. It's one of those things that's nice when it works but don't count on it. I think the major failure of the automatic braking system is that it often doesn't detect pedestrians. Sometimes I'm surprised that the little dashboard "pedestrian" light comes on, and often I notice that it doesn't when I think it should. And, surprisingly, it often comes on when it sees a picture of a person on the back of a truck parked on the side of the road:

This is a 'me' thing .... but I find the warning light for pedestrian present/danger to be difficult to see. Not sure I'm really picking the best words to describe what I'm trying to say but basically I suspect that light is on and I don't see it being 'on.'
