Won't those interfere with seat heaters?

My last Bolt doesn't have the heated seats unlike my previous Bolt (Premier).
The covers will fit the seats just fine but would likely take a bit longer to warm up with the heated seats.

Do they work with the seat mounted side airbags?

I'm uncertain on the front covers but the back ones yes. There is a discussion thread here that goes into more detail.
