We've only had a couple days with the 2021 model, but we were usually one-pedal drivers in our 2018, and have to constantly use the brake pedal on the 2021. Anyone else experiencing this?

It is temperature and SOC that effects how regen is getting strong.... 2020-21 are just more tolerant to this scenario.
Between 60-74°F 2020 is going to make less regen in L mode but once it gets warm while driving or constant L regen it will get stronger. SOC are also going to play how hard it will come.... I have no experience with 2017 so it may be different calibration on older versions.

I have a 2021 (just one week) and no 2018 experience to compare it to.
That said, when trying he one-pedal mode I never had to hit the brake.

As one other poster implies: It it my understanding that if by chance what's going on was you'd just pulled out of the driveway with the Bolt at or darn close to 100% charged it won't do any or much regen braking. That's to keep from overcharging the battery.

I just bought a 2021 Bolt and the ability to drive one-pedal has been great especially if I also use the control on the back of the steering wheel. I only charge to 80% (unless going on a long trip) so I get good response right away.

We're less than 40 miles into the first full charge it's had. So we'll stop worrying and look forward to L working well sometime soon.
If you have your Drivers Information Console set to "Enhanced" mode there should be a power meter on the right side of the speedometer that has a bar that grows up when you're using power and grows down when you're doing regenerative braking. When the car is unable to accept full regen, you'll see a thin white horizontal line below the centre point of that power meter - it indicates the maximum regen that the car can use. If you fully charge the battery to 100% that line will be very close to the "0" point on the meter, and it will gradually move down until it disappears off the bottom when you've used up around 3kWh or so of energy.
