I had 40K miles on a 2019 Bolt before swapping for a 2022 which I have had for about 7 months.
I exclusively operate in regen mode and use the paddle to come to a complete stop most of the time as I "dart around" (per my wife).
All that to say I think I am familiar with the "normal" operation of my Bolt.

However, first ever experience where I approached a stop sign by first removing my foot from the "accelerator" pedal, then applying the paddle to come to a complete stop. After which it is my routine to apply the brakes.

I was waiting for traffic to clear to turn right up a slight incline so removed my foot from the brake pedal - and - the car started accelerating quite quickly without me touching the accelerator pedal. I had to hit the brake pedal to stop the car.

It is my understanding the car uses the motors when at a stop to simulate the automatic transmission of an ICE car. I believe it is supposed to use the motors to keep the car from rolling when it is on an incline. This was a brisk acceleration like nothing I have ever experienced. Not sure what happened. Nothing was in the way of the accelerator pedal.

Tomorrow I am going back to the same stop sign to see if I can recreate this.

Any thoughts?

Any chance adaptive cruise had a speed set and you bumped the button to re-engage the previous set speed? Adaptive cruise can be activated from a stop, but standard cruise requires reaching 25 MPH before it can be engaged.

The cruise control is a definite possibility. I always leave it ON and I typically keep my left hand at the crux of the left cross bar of the steering wheel. I guess I could have engaged it.

Mats are fine, nothing around the pedals, and the regen mode is always on, still on, and I would notice if it had been off.

All good thoughts but I suspect CC is answer particularly since there aren't reports of "runaway" Bolt behavior.

I’m not sure ACC explains the event. I tested it and ACC won’t engage below 15mph. In addition, pressing any of the ACC controls does nothing if you hadn’t previously set a target speed (which gets reset every time you turn the car off). I had not used ACC that day and had no target speed set.

True, after startup there is no set speed. You have to set a speed before resume does anything. I am surprised about the 15 MPH, though. Every adaptive cruise system I’ve driven allowed resuming from a stop.

I just couldn't get it to engage the first time below 15mph. Once you have engaged it and a target has been set I believe it will re-engage even if you are starting from less than 15mph.

I went back to the "scene of the crime" and the only way that recreated a similar unexpected acceleration was if regen was OFF. I have a 2022 so (unlike my 2019) regen is always selected ON and I don't remember turning it off. I might have accidently turned it off but I don't recollect it being off and turning it back on at any point.
I suspect it was me, not the car but still not exactly sure what happened.

You're absolutely sure that the seatbelt was buckled? Because an unbuckled seatbelt will behave exactly like you're describing and when you're used to "L" mode it feels like uncommanded acceleration.
