Rather than hacking the source, could you hack the destination? Disconnect the lead from the speaker, connect it to something like a Raspberry Pi to detect the audio signal, then have the Pi output your own custom audio signal to the speaker? You'd also need to route and convert power (12V to 5V) to the Pi itself.
Edit: Never mind - I was thinking pedestrian warning sound when you start driving, not the infotainment boot sound.
How about just turning it off. There is a setting in the huge list on the infotainment screen. Almost four years ago, I went through the entire list, and turned everything off. Only sounds now are the ding when the door is ajar, and the pedestrian alert.
I bought a 2016 Volt before I bought my 2020 Bolt. I always liked the start-up sound the Volt made. My wife drives the Volt now and when I recently drove it I'd forgotten about that sound and realized how much I missed it. I would like to see Chevy give you the option to change it. I would like to make mine greet me when I turn it on, like Kitt from Knight Rider.
